As always I figure if I keep up the initial banter long enough the dude packin the heat will emerge and the real discussion will ensue...........
Him: If you want my personal opinion, I would have the chopped pork sandwich with sausage on top.
Me: Dude, you just read my mind.
Him: If you don't like it I will buy it back from you.

I pulled away very happy with my negotiation. I bit into the sandwich and almost wept. If butter could taste like BBQ this would be it.

Today I came to this trailer for the first time and ordered the two meat plate. I initially requested turkey and sausage, however the trailer was out of turkey before noon *(the trailer opens at 11 AM). Alternately, the brisket was recommended by the trailer owner.
I ordered the brisket with sauce. Unfortunately, the brisket lacked any smokiness and juiciness as if it had been cooked in a crock-pot as opposed to freshly prepared. This is an odd problem, because smoke is an essential element of great barbecue. The low temperature, wood-fired cooking and the resulting smoky flavor are what make barbecue distinct from roasting meat in an oven. I was perplexed about the lack of smokiness on this meat. The sausages were just okay. The beans for the meal lacked taste as did the seemingly store bought potato salad. -

Damn good country BBQ between Austin and Bee Cave right past the "County Line". The sack lunch is only $8.50 with a huge brisket sandwich, chips, homemade lemonade, pickles, onions, and jalapeño. VGS all the way.

Bee Cave BBQ is located on a side lot right on the edge of FM 2244. It is a food truck with its own dedicated lot with a grove of trees and its own picnic benches.
In theory, this ought to be good, but the location is sort of awful.
The tables are falling apart.
Your choice of views is
a) two dumpsters
b) a port-a-potty
c) the rear end of the food trailer
d) an electrical relay station
e) the traffic on F M 2244
I picked e) .
If you are looking for a beautiful excursion into hill country scenery, guess again.
The menu is small, which is good in a BBQ place because it means they concentrate on the main stuff.
Technically, if you are going to review a Texas BBQ place right, you try the straight up brisket and the straight up sausage and then discuss the pitmaster's subtle mastery of the art of smoking meat.
However, sandwiches and chopped brisket make up a huge percentage of Bee Cave BBQ's menu - so I took them on their own terms and had a chopped brisket sandwich.
Chopped brisket here is really brisket braised in sauce to the point of smoosh and 100% strings. This is actually good if you are going to drown the meat in a ton of sauce ... because smoosh plays better with sauce than cubes ... so this is actually a plus for Bee Caves.
They allow you to put a million ingredients on your sandwich and so I did. The normal pickles, and onions .... and sliced jalapenos.
(I drew the line at mustard which was an obscene suggestion.
I may be from Boston -
but I am not THAT out of touch with
the rules of fundamental decency concerning barbecue.)
The ingredients all played well together; the barbecue and sauce were well flavored and the jalapenos made a lovely team with the pickles, onions and the meat.
It was satisfying hearty fare -
a sandwich I would happily have again.
The sides on the other hand ....
nearly tasteless beans that I left on my plate -
and supermarket-quality potato salad which was ok for what it was.
How are the brisket or the sausage cooked up simply on their own terms?
I couldn't tell you.
But too many dumpsters and port-a-potties make me think too much about what is going to happen to my brisket.
That makes it hard to enjoy actually eating the brisket in the first place. -

Perhaps Austins' best-kept secret, just getting into this destination can feel Like an explosion of joy. House-made sausages, gargantuan-sized pork ribs and generously charred beef brisket compete for your attention with other equally tasty contenders like sandwiches that come crammed with hot links, brisket and pulled pork. Be sure to save room for the pies, it's wickedly good!
